Squash caviar
We need a couple of large zucchini: tomatoes – 10 kg, carrots – 2 pcs., Garlic – 10 cloves, vegetable oil – 1 tablespoon, as well as pepper, salt – to taste.
All vegetables are washed and cleaned, then everything is twisted in a meat grinder. Then, extinguished for 1 hour in a cauldron (until the entire liquid boils). Next, vegetable oil is added and fried, salt, sugar, garlic are added (grated), everything is stewed again for 10 minutes. Leave cool, then, finished caviar, lay out on banks (in advance sterilized) and roll up with sterile lids.
Kabachkaya caviar with celery
It will take: zucchini – 1 kg, celery with leaves and cuttings – 1 pcs., tomato paste – 100 g, salt.
The cooked zucchini is passed through a meat grinder, all the zucchini mass is placed in a mold and cooked in the oven. Then, cut celery with fine straws, fried in vegetable oil (not forgetting to put leaves and cuttings there). Further, when 10 minutes remain until the end of the calibration of the caviar, the tomato paste (previously saved), celery is added to it, season with salt and put in the oven again. When the caviar is ready, it is laid out in jars, rolled with lids and sterilized for 30 minutes.
Rucchini salad
Four liters based on four liters: zucchini – 5 kg, oil rises. – 0.5 l, vinegar – 300 g, sugar – 200 g, garlic – 200 g, bitter pepper – 1 pod, salt – 3 tablespoons.
Peel the zucchines, cut into thin circles. Parsley, dill are placed at the bottom of the large pots, fill with zucchini, salt, add vinegar with butter. Put on fire and boil for 20 minutes over low heat. After that, add pepper pepper with garlic, boiled again for about three minutes. Laid out in banks and roll up.
“RUDS WITH A LOC” (salad)
Ingredients: zucchini – 3 kg (sliced with thin circles), onions – 700 g (cut into rings and half -rings), chopped dill – 100 g, salt – 2 tablespoons, sugar – 1 tablespoon, vinegar – 240 g, vegetable oil – vegetable oil – 1 tablespoon.
Everything should be mixed and left for an hour, so that the juice is released from the zucchini. Then, the prepared mass, lay out in banks and sterilize for half an hour to an hour. Then roll up with lids, wrap it in clothes or blankets and leave for a day.
A snack from zucchini
It will be required: zucchini – 4 kg, 1 cup of tomato paste, garlic and vegetable oil, salt – 2 tablespoons, vinegar – 3 tablespoons.
Zucchini cut into cubes, you need to fit for forty minutes. Before the end (about 5 minutes), add vinegar and garlic. Lay the finished snack in jars and roll up.
A snack from zucchini acute
Necessary: zucchini – 3 kg, Bulgarian pepper – 4 pcs., Gorky pepper – to taste, garlic – 3 slices, tomato paste – 400 g, vegetable oil – 200 g, onions – 4 pcs., Carrots – 600g, sugar – 200 g, vinegar (five percent) – 200 g, salt – 1 tablespoon.
To prepare a snack, at first, they cut zucchini strips, grind Bulgarian pepper with garlic and taste – Gorky pepper. Tomato paste is bred in water, bringing the sauce to 1 liter, they pour zucchini. Then fry the grated carrots and chopped onions in a pan (separately from each other). Everything is mixed with zucchini, add sugar, salt, everything is mixed again. After that, stew until cooked (when the zucchini is soft), about 20 minutes. A few minutes before the completion of the extinguishing process, the prepared vinegar is added, mixed. Ready snack, laid out in jars, roll, cover the container with a blanket or warm clothes and leave in this state until the cans are completely cooled.
